GROWING GINSENG IN THE FOREST:
(13) Drying

by Hsuan H. Huang

  1. Dryings with wire-screened bottom should be used. The heat should be low at the start and a lots of air movement. The drying can take several weeks; depend on the size of the roots. The root may mold, rot, or mildew if there is not enough warm air movement. Too much heat will cause outside of the root to dry out to quickly and harden while inside still wet.

  2. During the drying processes, heat should be low at the start and gradually increases toward the end.

  3. A dry root will break in half with a snap, if it bends, it is not dry. If the roots are dried properly it can be kept for a long time.
